Homemade Vegetable stock cubes are the easiest way to cook any meal, especially when you have a baby at home or you need stock for your soups. This comes very handy while cooking baby recipes as you can always replace the water with these rich homemade vegetable stock cubes and your little one will get used to the new flavours.
I usually prepare vegetable and chicken stock cubes for preparing baby food and adding it to while making porridge, pulses etc
Ingredients
Carrot-1 chopped
Broccoli -5-6 florets & stem
Celery-1 stalk
Spinach- 6-7 stalks
Tomato-1
Ginger- 10g
Garlic- 3-4 pods
onion-1 large diced
Mushrooms- 4-5
Bean sprouts-handful
Water- 500 ml
Method
In a pressure cooker take all the vegetables and add water to it. I have pressure cooked for 15-20 minutes.
Open the cooker and on the low flame let it simmer for 40 minutes to an hour.
Later cool down and freeze it in cubes.
Transfer them to ziplock to use as when required to cook pulses, porridge etc for baby.
