Corn vegetable fritters
Ingredients
Corn Kernels- 1/4 cup(boiled & drained)
Egg-1
Milk- 4-5 tsp
Self Raising flour-5 tbsp
Grated carrot/Zucchini- 2 tsp
Method
1.Whisk together the corn, vegetables, egg and milk. Add Sifted flour into it.
2. Heat a little oil on a non-stick pan, using a big spoon place heaped spoonful of this mixture and cook.
3. Once it is golden and cooked, turn and cook on the other side as well.
Top it up with Cheese or serve along with mashed avocado or greek yoghurt.
** I have actually put the grated cheese but before i can click the photo, all the cheese was melted.
**You will be able to make 4-5 fritters
** If in case batter is runny, add little flour to it.
