I was reading about Leek other day and its benefits with vitamins, minerals and antioxidant. At the same time, I was introducing different flavours for my little girl from mild to strong, sweet, sour. This Leek Potato soup was a perfect option for a rainy day too.
Ingredients
Leek(white portion)- 1/2 cup
Potato- 1 (Diced)
Peas- handful
Butter
Water/ Homemade stock
Method
In a pan take 1 tbsp butter add leek white portion and stir for a minute.
Add potato and peas stirring it for 2 minutes.
Now add 3-4 vegetable stock cubes or 1 cup water.
Let it boil for 30 minutes and later mash or blend.
Usually, more cream is added to it for the rich texture but I just served plain to her so that she can have a real taste.
