I have first tasted this Kimchi pancake in my office when one of my colleagues brought this to the office. I very much liked the taste and the crispy texture.
That Tangy and spicy taste makes it a yummy snack anytime or even for the breakfast as well.
So it was a must try for me!!
Some people make their own kimchi mix but I haven’t tried doing it yet, so bought this ready to go kimchi mix from the supermarket.
You can do a variation to this mix according to your taste making it spicy, sour, crispy and can add more vegetables or chicken etc.
Kimchi Pancake
Ingredients
Kimchi Mix-250gm
Egg-1
All purpose flour- 1-1 ½ cup
Salt
Chilli powder
Oil for cooking
Water
1. I have used this Kimchi mix for preparing the pancake.
2. The mix looks like this and has little juice in it as well.
3. Mix all ingredients together Kimchi, 1 egg, flour, salt, chilli powder and later add water accordingly.
4. Make a smooth batter little bit runnier than the usual pancake batter
5. Usually, kimchi pancake are prepared in grapeseed oil but I have used olive oil for cooking.
Heat the pan( use a wider pan so that the batter will spread evenly) over medium heat and coat with a generous amount of olive oil for a crispier pancake.
6. Pour your batter and let it flow and spread to the corner so as to cover the entire pan.
7. Cook it for 1-1 ½ minutes until the bottom gets golden brown and crispy
8. Turn over with help of a spatula or flip it in the air if you are good at that and finish by cooking 1-2 more minutes, adding more oil if necessary.

Oh, I love to eat kim chi! Not sure about kim chi pancake though! I'm hungry just talking about it…..
